Avocado Bacon Bomb

Ingredients for 2 bacon bombs

2 avocados
100 g cheddar cheese
1 kg minced meat (beef or a mix of beef and pork)
1 tsp pepper
1 tsp salt
20 slices HANDL TYROL Fine Barbecue Bacon
Favourite BBQ Rub
Favourite BBQ Sauce

Method

Preparation

  1. Halve the avocados lengthways, remove the stones and carefully remove the flesh with a dessert spoon.
  2. Dice the cheddar cheese.
  3.  Fill each avocado half with a little bit of cheese and then put them back together.
  4.  Season the minced meat heavily with sea salt and pepper. Then knead to mix thoroughly.
  5.  Divide the minced meat into 4 equally sized portions. Roll into balls and press flat until they resemble little pizzas.
  6.  Place each filled avocado onto a portion of minced meat, place a second disc of minced meat on top and carefully press together. Form into a ball shape until the avocado is completely covered by the meat. Sprinkle the two balls generously with the BBQ rub of your choice. 
  7. To finish, completely wrap the balls with the slices of barbecue bacon and press firmly together.

For the barbecue:

  1.  Preheat your grill to approx. 160°C on indirect heat. 
  2.  Grill the avocado bacon bombs in the indirect heat zone until they reach a core temperature of 70°C.
  3.  As soon as a core temperature of approx. 70°C is reached, brush generously with your favourite BBQ sauce and place back on the grill.
  4.  Remove the avocado bacon bombs from the barbecue as soon as the core temperature of approx. 80°C has been reached.
