Stir fried Tyrolean Ham Dumpling pan with eggs

Ingredients for 4

8 speck dumplings
1 pair HANDL TYROL Tyrolean Bergwurz
4 eggs
1 onion
1 garlic clove
2 tbsp butter
1 tsp caraway seeds (optional)
Nutmeg
Salt
Pepper

For a special taste: HANDL TYROL Tyrolean Bergwurz AMA Tyrolean Mountain Raw Sausage 1 pair Handl Tyrol

Method

  1. Slice the onion and garlic into thin strips. Slice the Tyrolean Bergwurz. Sauté in a pan with butter. Cut the speck dumplings into bite-sized pieces and fry until golden brown.
  2. Beat the eggs, pour over the dumplings and mix well. Continue frying until the eggs are set.
  3. Season with salt, pepper, nutmeg and caraway seeds.
  4. Serve the tyrolean speck dumpling hash with egg and garnish with freshly chopped thyme.

As a side we recommend a green salad or a cole-slaw.
