Feta-Watermelon Salad with Crispy Bacon

Ingredients for 4 people:

For the Salad:

1 watermelon
200g feta cheese
Basil
1 pkg. HANDL TYROL Finest Bacon

For the Dressing:

3 tbsp white balsamic vinegar
2 tbsp olive oil
2-3 tbsp water
1 tsp honey
Pinch of salt
Pinch of pepper

Additionally:

Baguette
Some olive oil

Method:

Beginner
  1. For the Dressing: Combine all dressing ingredients and whisk until smooth.
  2. For the Salad: Halve the watermelon and use a melon baller to scoop out melon balls (alternatively, cut the melon into cubes). Cut the feta cheese into approx. 1 cm x 1 cm cubes. Wash, dry, and tear the basil. Combine the watermelon, feta, and basil in a bowl.
  3. For the Baguette: Slice the baguette. Heat some olive oil in a pan and toast the baguette slices on both sides for 1-2 minutes until crispy.
  4. For the Bacon: Just before serving, fry the finest bacon in a pan without fat until crispy.
  5. To Serve: Drizzle the salad with the dressing and garnish with freshly fried, crispy bacon. Serve with freshly toasted baguette.
