Tyrolean BBQ Shots

Ingredients for 4 people:

1 pineapple
50g Parmesan
250g cream cheese
125g crème fraîche
75g grated cheddar cheese
2 packs HANDL TYROL Fine Barbecue Bacon
1 pinch BBQ rub
3 spring onions
Salt and pepper

Method:

  1. Peel the pineapple and cut it into 2 cm thick slices. Cut out circles about 3.5 cm in diameter or use a cookie cutter.
  2. In a bowl, mix the cream cheese, crème fraîche, and grated cheddar into a smooth mixture. Season with salt and pepper.
  3. Wrap each pineapple circle with two slices of barbecue bacon to form a cylinder. Secure with a toothpick.
  4. Fill the BBQ shots with the prepared cream cheese mixture and sprinkle with BBQ rub.

On the Grill:

  1. Preheat the grill to about 130-140°C.
  2. Place the filled BBQ shots on the grill rack and cook over indirect heat for about 45 minutes.
  3. Brush the bacon with BBQ sauce towards the end of the grilling time.
  4. The BBQ shots are ready when the bacon is crispy and the cheese is melted.

Tip: Garnish with chopped spring onions and grated Parmesan.
